Asparagus and Black Beans

Ingredients:
12 asparagus spears
½ cup black beans (rinse first if using canned beans – they are a very easy healthy option)
½ tbsp. butter
1/4 cup water

Directions:

  1. Set your frying pan to a medium heat (5 or so) and put the butter in the pan. Make sure a lid is handy. You’ll need it soon.
  2. As your pan is heating, take off the bottom of the asparagus spears, and then cut the sections that are left in half. You may also choose to snap the sections by hand since this is half the fun of asparagus! They’ll snap exactly where they should.
  3. Put the asparagus in the pan with the melted butter and toss them to coat.
  4. Rinse your black beans and drain well.
  5. Add the beans to the pan and toss it all a few times to coat everything.
  6. Add a quarter cup water to the pan and toss a bit again. Put the lid over the pan and cook for about 12 minutes, or until the asparagus is the firmness you prefer. This will steam everything nicely.
  7. When your asparagus is how you like it, drain and serve in a nice big bowl.
  8. Enjoy!

Allowances:
Serves 2 if served as a side, 1 if eaten as a healthy main.
